Mommy’s Weird

I found a whack of carrots starting to become one with our fridge. I had to think like my Mom, which is not something I like to do that often. What would she do?
My Mom would make carrot soup.
So I guess I will too.
Lynne’s Delectable Carrot Soup
1/4 cup butter
1 onion
2 cloves garlic
4 cups sliced carrots
1/2 cup raw rice
1/2 tsp pepper
1/2 tsp parsley flakes
Melt butter in soup pot. Add onions and garlic and sauté until soft, not brown.
Add soup base, carrots and seasoning.
Reduce heat to low and cook carrots until tender (15 minutes)
Add rice and cook until rice is well done (30 minutes)
Pour into blender and puree.
Eat.
I am not much of a cook. I try not to do it very often. But, when I do. I do it well. It is part of my charm. I am good at everything.
