One Pot Pad Thai

I have been watching different versions of One Pot Pad Thai float around on line for the last month.

Now listen, I am not a person who usually tries something new. But, I will do anything for Pad Thai. Sheesh, I don’t think I love my husband as much as I love Pad Thai.

I’m not lying. It has to be by far the best thing I have ever made my family in my entire life. I even noticed my husband looking at me with dreamy eyes from across the table…

Now, let me take you back a moment.

After I found an idea of a recipe, I then headed to Real Canadian Superstore, which is part of Loblaws. Recently I was educated about sustainable seafood. I had no idea that choosing sustainable seafood helps protect our marine environment and helps so that we will be able to enjoy seafood for years.

I don’t know about you. But, I don’t want to live in a world without shrimp.

For reals.

MSC-logo-300x40I also had no idea that it was so easy to find sustainable seafood in the store. And really, Canada is surrounded by oceans, like 40% of our country has a coast. So, I started looking for the MSC eco label logo. It looks like this…

Thankfully things were labeled really well in the store so it was easy to find the shrimp I needed for my One Pot Pad Thai.

One Pot Pad Thai

6 cups chicken broth

4 thinly sliced cloves of garlic

1 red bell pepper sliced about the size of your pinky finger

1 carrot sliced

2 cups of sugar snap peas

2 green onions chopped

2 inches of ginger sliced about the size of your pinky finger

Kyla Pad Thai 31 tablespoon of fish sauce

4 tablespoons of peanut butter

1 tsp of red pepper flakes

1 cup peanuts

12 oz bag of cooked peeled shrimp with MSC ecolabel

Put all these ingredients into large pot.

Bring to boil, reduce to simmer and cover for 15 minutes.

Keep checking every few minutes and stir.

Once the pasta is cooked and liquid has evaporated a tad and thickened; then you are ready to serve.

Garnish with chopped peanuts and lime.
