Vegetable Root Bake

Everyone run for cover! Mommy’s Weird is cooking again!
I would love to tell you that I am feeling all fall like and want to make something that matches my onesie, you know, all comfy and cozy like. But, it’s not the case.
This is my favourite dish to make when I buy too many vegetables and they are starting to rot in the fridge.
Vegetable Root Bake
Pick four or more of the following of the following: Carrots, butternut squash, turnip, rutabaga, potatoes, yam, sweet potato etc.
Cube and put in pot with cold water and let come to a boil. Reduce heat and simmer covered for 20 minutes.
Add 1/2 cup of chicken or vegetable broth
1/2 cup milk
2 tablespoons of butter or margarine
1/4 tsp of salt
1/4 teaspoon of pepper
Mix it all up with your electric mixer.
Transfer into a casserole dish.
Toss some bread crumbs on top.
Cook at 425 for 30 minutes.
Delightful.
Delicious.
I feel all namaste like.
