Cauliflower Fritters

I have been experimenting a tad in the kitchen. Mostly, because I have been watching my sugar intake and therefore dumping quite a bit of carbs and in the process learning that cauliflower is the most magical vegetable on the planet.
Cauliflower Mashed Potatoes. Cauliflower Rice. Cauliflower Pizza Crust.
Wow. It is also one of those words that looks really stupid the more you look at it. Kind of like Hugh Grant.
Cauliflower Fritters
6- 8 cups of cauliflower
1 small onion
3/4 cup coconut flour (read below)
4 eggs
1 tsp savory
1 tsp oregano
Oil for frying
Chop up cauliflower in a food processor with onion.
Add everything else and mix.
Warm up hot pan with oil. (I used olive oil)
Scoop in solid little balls and place in hot pan. Cook two to three minutes a side until brown.
Now, I totally dug these. The next time I make them I will use almond flour instead of coconut flour because coconut flour really loves to suck up the oil and I had to keep adding more oil to my pan.
