Easy Perogi Casserole

My kids love perogis. They get that obsession from me. I love those little guys so much, but they are impossible for me to make. I am not that kind of person. So, in true Mommy’s Weird fashion, I have found the easiest way to make my most favourite meal. Let me introduce you to Easy Lazy Perogi Casserole.
Lazy Perogi Casserole
9 to 12 lasagna noodles (not the ready to cook ones)
1 small tub of cottage cheese (500 gram size)
1 egg
1 cup or more of shredded cheese
2 cups of mashed potatoes
1 cup chopped onions
1/2 cup butter
1/2 tsp of garlic salt
1/2 tsp of ground pepper
Cook lasagna noodles.
Sauté to soften onions with butter in frying pan.
Spray a 9x 12 or so size pan and place first layer of lasagna noodles on bottom.
Mix cottage cheese, egg, garlic salt and pepper. Spread all of it over the lasagna noodles.
Add another layer of lasagna noodles.
Mix mashed potatoes and shredded cheese. Spread all of it over the lasagna noodles.
Add another layer of lasagna noodles.
Spread onions and butter over last layer of lasagna noodles.
Cover and bake for 35 minutes at 350.
Let stand five to 10 minutes before you cut it up to serve.
We dig it with sour cream.
